Bourbon-Bacon Peanut Brittle

This crunchy candy is filled with our Southern favorites—bacon, peanuts, and bourbon.

Bourbon-Bacon Peanut Brittle
Serves: About 6 Cups
 
Ingredients
  • 1½ cups sugar
  • ½ cup light corn syrup
  • ½ cup bourbon
  • 1 cup raw peanuts
  • 6 slices thick-cut bacon, cooked and crumbled
  • 2 tablespoons unsalted butter
  • 1 teaspoon baking soda
Instructions
  1. Spray a large rimmed baking sheet with cooking spray.
  2. In a 10-inch cast-iron skillet, bring sugar, corn syrup, and bourbon to a boil over medium heat. Stir in peanuts; cook, stirring constantly, until a candy thermometer registers 300°, 18 to 20 minutes. Remove from heat; stir in bacon, butter, and baking soda until combined. Pour onto prepared pan, smooth with a spatula. Let cool completely; break into pieces.

    • Hi Gib, the size of the rimmed baking sheet isn’t crucial. If you like your brittle a little thinner or thicker, use a smaller or larger pan as you like. We would consider a 13×9-inch baking sheet on the small side of “large.”
