Ingredients
  1. ½ cup canola oil
  2. ¾ cup all-purpose flour
  3. ½ teaspoon salt
  4. ¼ teaspoon ground black pepper
  5. ½ cup whole buttermilk
  6. 4 (21⁄2-ounce) boneless pork loin chops, thinly sliced
  7. Sage Gravy (recipe follows)
Instructions
  1. In a 10-inch skillet, heat canola oil over medium-high heat. Line a plate with paper towels. Set aside.
  2. In a shallow dish, whisk together flour, salt, and pepper. Reserve 1 tablespoon flour mixture. In another shallow dish, place buttermilk. Sprinkle both sides of pork chops with reserved 1 tablespoon flour mixture. Dip pork chops in buttermilk, draining excess. Place in flour mixture, turning to coat. Shake off excess.
  3. Add 2 chops to skillet; cook until golden brown, approximately 1 minute per side (adjust heat to medium, if necessary). Let drain on paper towels. Repeat procedure with remaining pork chops. Reserve 1 tablespoon pan drippings for Sage Gravy.
