Ingredients
- ½ cup canola oil
- ¾ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup whole buttermilk
- 4 (21⁄2-ounce) boneless pork loin chops, thinly sliced
- Sage Gravy (recipe follows)
Instructions
- In a 10-inch skillet, heat canola oil over medium-high heat. Line a plate with paper towels. Set aside.
- In a shallow dish, whisk together flour, salt, and pepper. Reserve 1 tablespoon flour mixture. In another shallow dish, place buttermilk. Sprinkle both sides of pork chops with reserved 1 tablespoon flour mixture. Dip pork chops in buttermilk, draining excess. Place in flour mixture, turning to coat. Shake off excess.
- Add 2 chops to skillet; cook until golden brown, approximately 1 minute per side (adjust heat to medium, if necessary). Let drain on paper towels. Repeat procedure with remaining pork chops. Reserve 1 tablespoon pan drippings for Sage Gravy.

- 1 ¼ cups whole milk
- 1 tablespoon finely chopped fresh sage
- ½ teaspoon salt
- ⅛ teaspoon ground red pepper
- ⅛ teaspoon ground black pepper
Instructions
- In a 10-inch skillet, combine reserved 1 tablespoon pan drippings and flour. Whisk in milk. Bring to a simmer over medium heat, stirring constantly. Cook, stirring constantly, until thickened and smooth, approximately 5 minutes. Remove from heat. Stir in sage, salt, red pepper, and black pepper. Serve immediately.
