Chocolate-Butterscotch Skillet Brownies

Baking these brownies in a preheated cast-iron skillet gives them a crunchy crust.

Chocolate-Butterscotch Skillet Brownies
Serves: 10 to 12 servings
 
Ingredients
  • 1 cup plus 2 tablespoons unsalted butter
  • 4 ounces unsweetened chocolate, chopped
  • 2 cups sugar
  • 1½ cups firmly packed light brown sugar
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 1⅔ cups all-purpose flour
  • ⅛ teaspoon kosher salt
  • 1 cup butterscotch morsels
  • 1 cup semisweet chocolate morsels
  • 1 cup toasted pecans, chopped
  • Vanilla ice cream, to serve
Instructions
  1. Preheat oven to 350°. In a 12-inch cast-iron skillet, place 2 tablespoons butter. Place skillet in oven to preheat.
  2. In a small saucepan, melt remaining 1 cup butter and unsweetened chocolate over medium-low heat, stirring until smooth. Let cool slightly.
  3. In a large bowl, beat sugars, eggs, and vanilla at medium-high speed with a mixer until fluffy and pale. Reduce speed to medium-low; gradually beat in flour and salt until combined. Stir in melted chocolate mixture until smooth. Stir in butterscotch, chocolate morsels, and pecans. Carefully remove skillet from oven; spoon batter into skillet.
  4. Bake until center is set, 35 to 40 minutes. Let cool 30 minutes. Serve with ice cream.

  1. Has anyone made this! Mine is in the oven and it is 90% goo at 35 minutes. ……now at 1 hour, it is starting to cook.
    Oven was preheated, skillet too. Followed directions.
    Wondering if stated cooking time should have been a half way mark then rotate the open and cook for 1/2?
    Smells delicious at 1hour!

    • Hi Meg, are you using a 12-inch skillet or a 10-inch? When we tested in the 12-inch, as this recipe calls for, we didn’t have any issues. Sometimes variations in ovens can cause the timing discrepancy that you are referring to. But we have had readers try to bake this in a 10-inch skillet, the other common size, and they do have to add extra time.

    • Hi Dorian, unsweetened chocolate has no sugar added and usually comes in bars. Look for it in the baking aisle of your grocery store with the nuts and other chocolate products. Baker’s and Hershey’s brands both have unsweetened chocolate. Hope this helps!
