Cranberry-Cider Glazed Ham

Makes 10 to 12 servings
Ingredients
  • 1 cup whole berry cranberry sauce
  • ¾ cup apple cider
  • ½ cup stone-ground mustard
  • 1 teaspoon hot sauce
  • 1 (10-to 11-pound) bone-in smoked ham
  • 1 cup water
  • Garnish: fresh parsley, fresh cranberries, sautéed apples (see Kitchen Tip)
Instructions
  1. Preheat oven to 325°. Spray a 12-inch cast-iron skillet with cooking spray.
  2. In the container of a blender, pulse together cranberry sauce, cider, mustard, and hot sauce until smooth.
  3. Using a sharp knife, lightly score outside of ham. Add 1 cup water to prepared pan; place ham in pan. Loosely cover with foil.
  4. Bake for 1 hour. Uncover and bake until a meat thermometer inserted in thickest portion of ham registers 160°, about 1 hour and 30 minutes more, basting with cranberry mixture every 30 minutes. (Loosely cover with foil to prevent excess browning, if necessary.) 5. Transfer ham to a serving platter, and loosely cover with foil. Let stand for 20 minutes before serving. Garnish with parsley, cranberries, and apples, if desired.
Notes
KITCHEN TIP - To sauté apples for ham, melt 3 tablespoons unsalted butter in a cast-iron skillet over medium heat. Add 1 small halved and 2 quartered medium apples; cook, turning occasionally, until browned, 5 to 8 minutes.
