Honey and Spice Granola
- ½ cup unsalted butter
- ¼ cup firmly packed light brown sugar
- 2 tablespoons granulated sugar
- ¼ cup honey
- 1 teaspoon vanilla extract
- 2 cups old-fashioned oats
- 1 cup chopped pecans
- ½ cup chopped whole almonds
- ½ cup chopped dried apricots
- ¼ cup raw pumpkin seeds
- ¾ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground red pepper
- ½ cup dried cranberries
- Preheat oven to 275°.
- In a 12-inch cast-iron skillet, bring butter, sugars, honey, and vanilla to a simmer over medium heat. Cook, stirring frequently, until butter is melted. Remove from heat. Add oats, pecans, almonds, apricots, pumpkin seeds, salt, cinnamon, nutmeg, and red pepper, stirring until combined.
- Bake until golden brown, about 55 minutes, stirring occasionally. (Mixture will continue to dry as it cools.) Stir in cranberries. Let cool in pan on a wire rack, stirring occasionally to prevent granola from sticking to pan.
