Honey and Spice Granola
 
 
Serves: 6 cups
Ingredients
  • ½ cup unsalted butter
  • ¼ cup firmly packed light brown sugar
  • 2 tablespoons granulated sugar
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned oats
  • 1 cup chopped pecans
  • ½ cup chopped whole almonds
  • ½ cup chopped dried apricots
  • ¼ cup raw pumpkin seeds
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground red pepper
  • ½ cup dried cranberries
Instructions
  1. Preheat oven to 275°.
  2. In a 12-inch cast-iron skillet, bring butter, sugars, honey, and vanilla to a simmer over medium heat. Cook, stirring frequently, until butter is melted. Remove from heat. Add oats, pecans, almonds, apricots, pumpkin seeds, salt, cinnamon, nutmeg, and red pepper, stirring until combined.
  3. Bake until golden brown, about 55 minutes, stirring occasionally. (Mixture will continue to dry as it cools.) Stir in cranberries. Let cool in pan on a wire rack, stirring occasionally to prevent granola from sticking to pan.
