Baked Blackberry-Almond Oatmeal
 
 
Makes 4 to 6 servings
Ingredients
  • 4 tablespoons melted unsalted butter, divided
  • 2 cups old-fashioned oats
  • ½ cup sliced almonds, divided
  • 1½ teaspoons apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 2 cups whole milk
  • ½ cup honey, plus more to serve
  • 1 large egg
  • 2½ teaspoons vanilla extract
  • 1¾ cups fresh blackberries, divided
Instructions
  1. Preheat oven to 375°. In a 9- to 10-inch cast-iron skillet, swirl 1 tablespoon melted butter until coated.
  2. In a large bowl, whisk together oats, ¼ cup almonds, pie spice, baking powder, and salt. In medium bowl, whisk together milk, honey, egg. 2 tablespoons melted butter, and vanilla. Stir milk mixture into oat mixture.
  3. Add 1¼ cups blackberries to prepared skillet. Pour oats mixture all over. Top with remaining ½ cup blackberries and remaining ¼ cup almonds. Drizzle with remaining 1 tablespoon melted butter.
  4. Bake until bubbly and set, 30 to 35 minutes. Let stand for 5 minutes. Serve with additional honey.
