Basil takes the place of lettuce in this BLT-inspired pizza. It’s also a great way to use early summer tomatoes.
8-Inch Green Tomato and Bacon Pizza
Serves: 1 (8-inch pizza)
Ingredients
- 8-INCH
- 3 (⅛-inch-thick) slices green tomato
- 3 (⅛-inch-thick) slices red tomato
- ¼ teaspoon kosher salt
- 2 slices bacon, chopped
- Basic Pizza Dough
- 3 tablespoons pasta sauce*
- 2 ounces fresh mozzarella cheese, sliced
- Garnish: fresh basil, ground black pepper

- 4 (⅛-inch-thick) slices green tomato
- 4 (⅛-inch-thick) slices red tomato
- ½ teaspoon kosher salt
- 3 slices bacon, chopped

- ¾ teaspoon kosher salt
- 4 slices bacon, chopped

- ½ cup plus 1 tablespoon pasta sauce*
- 4 ounces fresh mozzarella cheese, sliced
- Garnish: fresh basil, ground black pepper

- 6 (⅛-inch-thick) slices green tomato
- 6 (⅛-inch-thick) slices red tomato
- 1 teaspoon kosher salt
- 5 slices bacon, chopped
- Basic Pizza Dough
- ¾ cup pasta sauce*
- 5 ounces fresh mozzarella cheese, sliced
- Garnish: fresh basil, ground black pepper
Instructions
- Place tomato slices on several layers of paper towels; sprinkle with salt. Let stand for 30 minutes. Pat tomatoes dry with a paper towel.
- Preheat oven to 475°.In a cast-iron skillet, cook bacon over medium heat until crisp. Remove bacon from pan using a slotted spoon, and let drain on paper towels.
- Lightly dust an 8-, 10-, 12-, or 14-inch cast-iron skillet or baking pan with flour.
- Using floured hands, gently stretch Basic Pizza Dough to cover bottom and press ½ inch up sides of skillet or to edges of pan. Cover and let stand for 10 minutes.
- Uncover crust; spread pasta sauce onto crust, leaving a ½-inch border. Arrange tomato slices on sauce, overlapping slightly.
- Bake until crust is lightly browned around the edges, 15 to 17 minutes. Top with cheese; bake until cheese is melted, about 5 minutes more.
- Sprinkle with bacon. Garnish with basil and pepper, if desired.
