Before you fire up the grill this summer, make sure you are enhancing your favorite meat or veggies with the perfect pairing of flavor. Pour one of Tony Chachere’s 30-minute marinades over your fish, chicken, beef, or favorite protein, and after it marinates, sprinkle on one of Tony’s seasonings. You can also use the seasoning on your veggies or sides for even more amazing flavor. It’s a combination that will take your barbecue to the next level.
Creole Salmon and Pineapple Skewers

Ingredients
- 4 Wooden Skewers (each 10 inches)
- 2 Pounds Skinless Salmon Fillets, Thick Portions
- 1 Cup Tony’s 30-Minute Seafood Marinade
- 1 Cup Fresh Pineapple, Cut into 2-Inch Chunks
- 2 Red Bell Peppers, Cut into 2-Inch Squares
- 1 Fresh Lemon
- ½ Teaspoon Tony’s BOLD Creole Seasoning
Instructions
- Soak skewers in water for 30 minutes.
- Cut thick portions of salmon fillets into 2-inch squares. Place salmon in a glass baking dish, pour Tony’s Seafood Marinade over the salmon, cover the dish with plastic and refrigerate for 30 minutes (let marinate longer for a more intense flavor).
- Preheat grill.
- Using two skewers side-by-side and an inch apart, thread salmon, red bell pepper, pineapple and repeat. Continue alternating ingredients to fill skewers.
- Evenly space skewers on grill and cook until done, about 10-12 minutes.
Notes
Soak the skewers in water before you begin to prepare the recipe. This will prevent them from burning.
1. Using two skewers to thread each serving prevents them from flipping and allows you to turn the skewers easily.
2. Try adding other vegetables to the skewers like onions, zucchini and mushrooms.
3. This recipe is also great baked at 400°F or broiled.
4. Serve these salmon skewers over a bed of Tony’s Butter & Herb Rice with vegetables for a complete dinner.
