Buttermilk adds a delicious tang to this classic birthday cake.
Vanilla Buttermilk Cake with Chocolate-Buttermilk Frosting
Makes 1 (9-inch) cake
Ingredients
- ½ cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- ½ teaspoon vanilla extract
- 1⅓ cups all-purpose flour
- 1¼ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ cup whole buttermilk
- Chocolate-Buttermilk Frosting (recipe follows)
- Garnish: sprinkles
Instructions
- Preheat oven to 350°. Spray a 9-inch cast-iron skillet with cooking spray.
- In a large bowl, beat butter and sugar with a mixer at medium speed until fluffy, 5 to 7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
- In a medium bowl, whisk together flour, baking powder, and salt. Gradually add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture, beating just until combined after each addition. Spread batter in prepared skillet.
- Bake until a wooden pick inserted in center comes out clean, 30 to 35 minutes. Let cool completely. Spread with Chocolate Buttermilk Frosting. Garnish with sprinkles, if desired.
Chocolate-Buttermilk Frosting
Makes about 1½ cups
Ingredients
- ½ cup unsalted butter, softened
- 2 cups confectioners’ sugar
- ¼ cup unsweetened cocoa powder
- ½ teaspoon kosher salt
- 3 tablespoons whole buttermilk
Instructions
- In a large bowl, beat butter with a mixer at medium speed until creamy. In a small bowl, sift together confectioners’ sugar, cocoa, and salt. Add cocoa mixture to butter, beating until combined. Stir in buttermilk until mixture reaches a spreadable consistency.
